Strawberry Cake with Vanilla Frosting
Strawberry Cake

I know how many times I have mentioned that I have a pretty big family, and there are a couple times a month where a bunch of my family members have birthdays clustered closely together. When that happens, we have a tendency to have “joint” birthday dinners on the Sunday in the middle of them. Most of the time my mom, my sister and I each make one cake and then everyone gets their own candles to blow out. It also means that some of us piggy-piggies get to have three pieces of cake and call it “sampling.”

Strawberry Cake

This is the cake I brought to a recent “joint birthday”. It was a triple-decker Strawberry Cake with Vanilla Frosting. We still have tons of ripe gorgeous strawberries and the berries coming from the local strawberry farms are so beautiful and sweet. I pureed them and baked them right into the vanilla cake batter. The cake is not too sweet, and when it is paired with sweet tartness of the strawberries and the super sweet vanilla frosting, it is wonderful.

Great timing … a friend had a strawberry cake recently for her birthday and raved about it. I’ve never made one, but have not been able to get ‘strawberry cake’ out of my mind since May (!) and it has been on my list to find a good recipe to make this summer … thank you for reading my mind :)

Jen Marie- Hi I think the strawberries are fine inside the cake for a day or two. The frosting has a lot of sugar in it, so it will make the strawberries “weep” a little, but the cake kind of sops up the moisture. I just stuck the leftovers in the fridge. I will say, I don’t think the cake is as good after the first day. In my experience, while the fruit puree make the cake moist initially, it seems to go stale more quickly because there is less fat in the cake as you replaced it with fruit. So best day of. If you have to make the cake ahead of time- I would freeze the layers immediately, and then frost them as they are thawing.

This looks gorgeous and I’d like to bake it for a party next weekend, but I’m confused. You begin by saying it is a triple decker, the picture shows it being three layers. However, the recipe says to prepare 2 round pans. Your pictures show 3 pans ready for batter and the instructions also show that you are using 3. Please tell me, do I use 2 or 3, is there enough batter to use 3-9″ round pans? Mahalo!

I made this cake recently just for fun. It came out great, especially just the cake part, sooo addictingly heavenly n delicious. I like the idea of using fresh strawberries instead of most recipes that call for silly things like strawberry jello or colouring or just pieces of frozen strawberries. I had trouble with the frosting, it was my first time making frosting n I ended up putting too much sugar hoping to get the right consistency but it turned hard. But no big deal, when I keep the cake out for a while, out of the fridge, the frosting softens up without ruining the cake. Thanks for the recipe!!
