Chicken Chopped Salad

Chicken Chopped Salad

After all of these freaking cupcakes lately, I needed a salad! I love a good chopped salad, and this one is actually on the healthy end of the spectrum. In fact save for a little blue cheese, this salad is jam packed with great vegetables, lean protein and healthy fat in the forms of avocado and pistachio nuts.

Oh yeah, and it tastes good. There are no measurements, because you can add whatever ingredients work for you, or make your family happy. (I used this salad as an opportunity to clean out my produce bin and use up all the random stuff!)

Enjoy for lunch or dinner with a good piece of crusty French bread.

Yes! I’m so tired of sweets on food sites. Food. I want some real food that reminds me of spring.
Being a salad freak, this plate is fresh and not loaded with empty calories.
    I like your salad dressing.
