Brussels Sprouts. Please don’t groan. I know that they aren’t everyone’s favorite, but I may have found a way to get you eating your greens even if they don’t normally float your boat!
Ok- nobody be mad. But I might have to start sprinkling some slightly less healthy recipes in.
This was a special request by none other than my 8 year old nephew Dylan!
They went to a great French café in town, and he ordered the Carrot Curry Soup. I guess he scarfed the whole bowl down and loved it so much that he wanted me to come up with a recipe.
I am still trying to stick with my month of healthiness! So when we had friends over the other day, I decided to make a super fresh, delicious and low calorie appetizer- this Salmon Ceviche.
I wanted to use sweet potato puree and banana, both naturally sweet and nutritious and bake them into a bread that is a bit healthier than the norm, while still being something that my kids will like.
I know that this sounds weird. But it is a really wonderful, delicate and delicious combination. Not to mention beautiful. Oh, and healthy.
