Mango Coolers

FROM PARTY: Dinner on the Lawn for 6

These cocktails are sweet and delicious, and are to be sipped with caution, as they will really sneak up on you!

Mango Coolers
3 cups ripe mango, chopped into 1 inch pieces
3 shots (4-1/2 ounces) dark rum
1/2 cup fresh lime juice
3 Tbs simple syrup (recipe below)
4 cups of ice cubes

Combine everything in a blender and puree until smooth. Serve in chilled glasses, and garnish with mint or fresh mango.

Simple Syrup
3 cups sugar
1-1/2 cups water

Combine the sugar and water in a small saucepan, and cook it over medium-high heat. Cook, stirring frequently until the sugar is completely dissolved. This should take about 4 minutes. Remove from heat, and pour the syrup into a glass container, and chill. It can be refrigerated for up to 2 months.
