I will go on record right now and say that this is the best pumpkin pie I have ever had. I have back up too.

No matter how full I am, or how tight my pants are, or how much I want to lay in the fetal position in the corner while the room spins from too much food, I will always, always make room for pumpkin pie.
This Autumn Vegetable Pot Pie is the definition of hard core comfort food to me. But what you wouldn’t expect is that this is also really easy to make.
My mom showed up yesterday and she came baring gifts! The gifts were of the best possible kind in my opinion: edible.

The summer squash, I treat very much like I would a zucchini. And I love to bake with zucchini (see my chocolate zucchini cake , or spiced zucchini bread ). So I thought I would make a loaf cake/ bread using both my plentiful sour lemon juice, and also my yellow summer squash.
For the last FOUR years, in the month of January I have either been pregnant or had a small infant attached to me. In either case I was never concerned with starting the year with a diet, a cleanse or anything of the sort.
