Cinco De Mayo Recipes

Cinco De Mayo Recipes for you weekend fun!
These sandwiches are divine.
They are the cousin of the Cuban sandwich.
Not officially- just in my mind. And in my belly.
I know that this sounds ridiculous! Erase all visions of camp fire cooking from your mind and try to wrap your brain around fancy pork and beans! Wait…. That sounds even more ridiculous…
Pin ItI feel like I might get in trouble for calling this a Cuban. Because, truth be told I have never really had an authentic Cuban sandwich.
Happy New Year Everyone! I just wanted to say a thank you for all of your incredible support in 2011 and let you know how very much I’m looking forward to a delicious 2012!
-Raise your hand if you had a wonderful Christmas. -Raise your hand if you are exhausted. -Raise your hand if your hands are chapped and cracked and red from opening children’s toys packaged in excessive amounts of plastic and cardboard. -Raise your hand if you are pretty sure you have gone up a solid dress…
Stuffing is my favorite dish at Thanksgiving dinner. Sure, I love turkey slathered in gravy, I will carbo load with creamy mashed potatoes till I’m green, and I look forward to crispy Brussels sprouts all month- but stuffing? Favorite. Hands down. It even beats out my other favorite by a hair, buttery dinner rolls.
I finally headed down to my tomato patch the other night. There hasn’t been much point this summer, as our weather here in Seattle has been a little less than Summery. But after a nice sunny spell, I thought I should check. Indeed we had some pretty, ripe heirloom cherry tomatoes, and a bunch of basil.
Every once in a while I get on a kick with the food I am craving. Right now it is Mexican. I just long for spicy salsa, soft tortillas, flavorful braised meats. In response, I guess that there has been a lot of me trying my hardest to make Mexican food lately, (or maybe I should say Americanized Mexican Food!) I am no expert on anything authentic, but I know what tastes good to me, and that is how last Sunday’s dinner of Shredded Pork Burritos came to be!
