Pin ItThese lovely little bites (filled with Cambozola cheese, fig jam and red wine caramelized onions) are perfect for New Years eve- or for the middle of the afternoon- which is when I ate them.
This is probably blasphemous. It is a hybrid between Greek Village Salad (as my Greek husband calls it) and Panzanella (essentially rustic Italian Salad).
With summer coming to a close, and Labor Day BBQ’s right around the corner, I could not help but dish up one last cold noodle salad for you! This dish is great for a BBQ, to bring to a potluck, or even for all of the upcoming tailgating.
I was inspired to make this after flipping through an old wine country book that had a picture of a gorgeous focaccia bread studded with harvest grapes. It was very autumnal and looked so pretty that I thought I would like to make a summer version. That is what led me to this lovely recipe for focaccia bread with cherries and goat cheese.
I know what you are thinking- caramelized onions are so good- is there really any need to tamper with them? Well I did, and I’m glad- cause when you add wine to sweet and spicy red onions then add a bit of vinegar and sugar to top them off- you get something really special.
This is an absolutely beautiful soup. It is so unique and fresh and light with an incredible variety of flavors that seem to meld effortlessly while still being unexpected.
