I am still trying to stick with my month of healthiness! So when we had friends over the other day, I decided to make a super fresh, delicious and low calorie appetizer- this Salmon Ceviche.
This mustard glazed salmon is simple, delicious and quintessentially Northwest. The sweet mustard glaze gives the salmon additional flavor and the grains of mustard add texture and crunch. A wonderful perk is that this takes almost no prep and just a few minutes of hands off cooking- nothing could be better for a weeknight or a dinner party!
I love baking fish in parchment paper. Besides being healthy, there is something so beautiful about all of the different flavors steaming and marrying together inside the pretty paper package. It is one of the easiest cooking methods I can think of, and it creates the most elegant dish out of simple ingredients.
The weather has been so sad and grey and rainy for the last nine months, it was truly a gift to have the nice weather and to see some of the produce finally peeking its heads up. In fact I was kind of mesmerized by some of the beautiful produce that we are blessed with in the Pacific Northwest. I went stand to stand freaking out over the colors and flavors. It was like saying hi to an old friend that I hadn’t seen since last year!
