This chickpea dip was inspired by a spread I had on a sandwich earlier this summer on vacation. I realized that all of the rest of the ingredients were quickly playing second fiddle to the incredible chickpea concoction slathered on the bread. All I could think about was how I adored the smoky paprika and how beautifully it complimented the creamy garbanzo beans.
I have a freakish love to really good spicy whole grain mustard. I also have the same feelings towards a fuzzy, juicy, ripe peach. (weird?) Well folks, I decided to combine the two and make Peach Mustard.
Spicy, fresh and gorgeous with a hint of smoky bacon, this Tomatillo bacon Salsa is perfect for spooning over seafood!
Peel it for a salad, steam it , slice it and fry it with chilies, roast it with balsamic, grill it with meyer lemons, sauté and top with a creamy poached egg. The possibilities of fresh Asparagus are endless and delicious!!
So this may not be the most authentic of Kopanisti renditions, but the flavor is amazing, bright, salty spicy and with a hint of mint at the end of the bite.
In honor of St. Patricks day and because I feel Spring fast approaching, I was craving something fresh and green. I thought about Pizza, and about figuring out how to make a *bright* green pizza, or, well four different types of bright green Pizza!
