A beautiful and healthy Spring Salad to celebrate the end of Spring
These sandwiches are divine.
They are the cousin of the Cuban sandwich.
Not officially- just in my mind. And in my belly.
Something about the crispy chips, the gooey cheese and all the goodness in-between just makes them completely addictive to me. And if I thought I loved them before, since I met my husband, my nacho issue has been taken to another level. That’s what happens when two nacho lovers meet and fall in love.

I was in charge of bringing an appetizer to a family dinner this past weekend, and this is no small family we are talking about! I think just with my parents, brothers and sister and spouses and kids we are like 16 people! Jeez. But there was a fantastic sale on picked Dungeness crab at my local grocery store (Met Market for Seattleites) and it put crab cakes on the brain. I thought I would make some mini’s for the party.
Dinner can be a salad, and still be fun! I promise! I know I am starting to get a little shaky on my healthy eating pledge, (I am not sure how much longer I can last, I have no willpower!) But this play on a Ceasar salad is zippy and exciting and makes me want to shovel salad into my mouth ☺
