Green Onion, Bacon and Cheddar Waffles

I wanted to share this recipe with you, which I made several weeks ago and decided to make for dinner again tonight.

Green Onion, Bacon and Cheddar Waffles

I absolutely love “breakfast for dinner”. There is something wonderful and nostalgic to me about it. Something that my mom used to make for us on an occasional night. And I am just feeling tired and sentimental, so this was the perfect thing.

A Savory Green Onion, Bacon and Cheddar Waffle. Crispy and fluffy buttermilk waffles studded with crispy bacon, green onions and sharp cheddar cheese.

It was easy to make and tasted great and there was an oozy fried egg on top for goodness sake.

To make this waffle, this is what you do:

Sift the dry ingredients together. In a separate bowl, beat together the eggs, butter and milk until fluffy. Pour the wet ingredients into the dry ingredients and gently mix together.

Add the bacon, onions and cheese and gently mix to combine.

Pre-heat your waffle iron and spray the waffle iron with cooking spray and pour enough batter for a waffle in.

While the waffle is cooking, bring a non-stick pan to medium heat. Grease the pan and fry the eggs to desired doneness. Cook until the waffle is golden brown and top with a little butter and the fried egg.

Recipe: Green Onion, Bacon and Cheddar Waffles

Ingredients

  • -2 cups AP flour
  • -4 teaspoons baking powder
  • -2 tablespoons sugar
  • -1 teaspoon salt
  • -½ teaspoon black pepper
  • -2 eggs, beaten
  • -1 ½ cups buttermilk
  • -1/3 cup butter, melted
  • -4 strips crispy bacon
  • -½ cup green onions, thinly sliced
  • -1 cup Sharp cheddar cheese
  • -1 tablespoon butter
  • -6 large eggs

Instructions

  1. 1. Sift the dry ingredients together.
  2. 2. In a separate bowl, beat together the eggs, butter and milk until fluffy.
  3. 3. Pour the wet ingredients into the dry ingredients and gently mix together. Add the bacon, onions and cheese and gently mix to combine.
  4. 4. Pre-heat your waffle iron.
  5. 5. Spray the waffle iron with cooking spray and pour enough batter for a waffle in.

    Oh great!!! I bet it is a good dish with no bacon if you don’t want meat at all. I think that the egg on top gives plenty of protein!
