Raspberry Pomegranate Champagne Cocktail

I hope that you have all had a smashing Holidays!

I have loved every moment of having my husband home and my kiddies putting on like a million puppet shows and ballet performances a day and the dog snoring with relaxation and me taking a pretty decent break from working. Don’t we all just need to do that sometimes?

And in a few days we are heading for Palm Springs for a short trip to try and get a sunny Vitamin D hit that supplements just can’t seem to well, supplement for.

We are staying with friends, and I am totally going to volunteer to play bar tender on New Years. I love fun cocktails, (like last New Years Snow Ball Martini and kahlua float or the Blood Orange Champagne Cocktail) and this year’s Raspberry Pomegranate Champagne Cocktail is no exception.

Gorgeous, sweet and fruity- this one is seriously dangerous. I would know, since I tested these on a Wednesday morning and had to take a nap.

To make this cocktail, this is what you do:

Freeze your glasses until frosty.

Add 2 tablespoons of pomegranate juice to the bottom of each glass. Then add a few small scoops of the raspberry sorbet and 1 tablespoon of pomegranate seeds to each glass.

Top with chilled champagne.

(I continued to top off the glass with more champagne as I drank, because there is more than enough sorbet to flavor several glasses full if you wish.)

Recipe: Raspberry Pomegranate Champagne Cocktail

Ingredients

  • -8 tablespooons pomegranate juice
  • -1 pint raspberry sorbet
  • -4 tablespoons pomegranate seeds
  • -chilled champagne

Instructions

  1. 1. Freeze your glasses until frosty.
  2. 2. Add 2 tablespoons of pomegranate juice to the bottom of each glass.
  3. 3. Add a few small scoops of the raspberry sorbet and 1 tablespoon of pomegranate seeds to each glass.
  4. 4. Top with chilled champagne. (I continued to top off the glass with more champagne as I drank, because there is more than enough sorbet to flavor several glasses full if you wish.)

    With an 11-month-old in the house, we are facing a pretty lame NYE. But that’s fine. :) These drinks are beyond pretty! Love them. And Palm Springs sounds so fabulous. As a native Seattlite I’ve long treasured the therapeutic properties of a vacation somewhere sunny in the midst of our dreary winter. Makes such a big difference! Enjoy.

    Oh Kare- with a 3 and 5 year old, ours will still be lame! A few more years till we are back to “normal” I suspect! Thank you! I know that some people might think of those kind of mini-breaks as very extravagent, but natives here know that they are practically essential to making it through the long gray patches unscathed!
