Pork and Avocado Sandwich

These sandwiches are divine.

They are the cousin of the Cuban sandwich.

Not officially- just in my mind. And in my belly.

Tender Cuban Style Pulled Pork, creamy avocado, sweet and spicy red onions and swiss cheese are sandwiched between a soft and crusty French roll. Then, doused liberally with hot sauce. Yes, this is optional, but if you like spicy food- then highly recommended.

Perfect for a weekend afternoon, or even a weeknight dinner. I love to eat this with some crispy sweet potato chips, (which also taste good INSIDE of the sandwich. Yes, inside- I love the crunch!)

Pork and Avocado Sandwiches, makes 8 sandwiches

Cuban Style Pulled Pork

8 french rolls
olive oil

8 slices swiss cheese
2 large avocados
sweet and spicy red onions
hot sauce

Prepare the Cuban Style Pulled Pork

Slice the rolls in half horizontally and drizzle with olive oil. Lightly toast them on a griddle or in the oven at 350 degrees.

When the toast is golden and warm, but still soft, top with cheese, pork, onions and avocado.

Douse with some hot sauce!

Top with the other half of the roll.

Cut in half and serve. Enjoy!

    Thanks for the memory that made me smile, as a kid my favorite way to eat a sandwich was with chips inside! Haven’t htought of that in a long time!
