This mustard glazed salmon is simple, delicious and quintessentially Northwest. The sweet mustard glaze gives the salmon additional flavor and the grains of mustard add texture and crunch. A wonderful perk is that this takes almost no prep and just a few minutes of hands off cooking- nothing could be better for a weeknight or a dinner party!

I loved this served on a bed of cool crunchy raw cucumbers. They were a cool and refreshing contrast to the mustard glazed salmon, and were a beautiful color backdrop.

Mustard Glazed Roasted Salmon, serves 6
-2 lb Salmon fillet

Mustard Glaze:
-2 clove garlic, minced
-2 Tbs brown sugar
-¼ cup whole grain mustard
-2 Tbs rice wine vinegar
-pinch of Kosher salt

1)Preheat oven to 400 degrees. Prepare a sheet pan with a sheet of foil.

2)In a small bowl, mix together all of the ingredients until they are well combined.

3)Place the salmon on the sheet pan, and coat the salmon with the mustard glaze.

4)Roast the salmon in the oven at 400 degrees for 12-15 minutes, or until the fish is barely cooked through and the glaze has melted into the fish.

5)Remove from the oven and serve immediately.

    This is delicious! I make this exact recipe, except I use agave for the brown sugar, mainly because it’s easier–just a squeeze from the bottle. Yum! :)

    I may have to give agave a try. I admit that I have never used it, but I recently had my curiosity peaked when I had a wonderful dish that had been sweetened with it. Where do you buy it? like Whole Foods or something like that?

    Ok, I know I’ve got something good when I’m about to post something that looks almost exactly like something from Heather Christo! I did a pesto salmon last night (also in a foil packet) over some green avocado rice – even served it in a similar square white ceramic dish like you did. Wow! Would love to try this mustard glaze next time. Btw, we’re having your nicoise salad for dinner tonight – looking forward. :-)

    I tried this tonight and it was yummy. Hubby loved it too. Question — I would like to try to get a nice crust with the glaze since there’s brown sugar in it. Roasting it at 400 degrees for 20 minutes did not produce a crust for me (not sure it should have). Any ideas on how that could be achieved. Broiling? Pan searing? By the way, I love agave — I try to omit refined sugar when necessary both for myself and my daughter and so agave is a great substitute. You can find it at Whole Foods or Trader Joe’s. Pretty common these days because it is so popular.

    This was for more of a glaze than a crust. If you broil, watch the timing so the Salmon is not dried out. Pan searing would do it! please let me know how it goes of you try that route!

    We loved this recipe!! It was delicious and very easy to put together. Great flavor! I love stone ground mustard, but liked how the rice vinegar, brown sugar and garlic mellowed the mustard a bit. Thanks for sharing! :)
