For me, this is one of the best desserts I have had in a while. I loooove coconut- like I have a love affair with it. And if you are one of those people that love’s sweet and salty desserts, this is for you.

These are like the perfect hybrid of a flaky shortbread cookie and a cakey blondie. The incredible caramel flavor from the brown sugar and butter, the texture and flavor of the coconut, the crunch of buttery macadamia nuts and the smooth and creamy white chocolate.

These are rich and buttery and totally incredible. Enjoy.

Coconut Bars with Macadamia Nuts and White Chocolate
2 2/3 cup AP flour
2 cups brown sugar
2 tsp baking powder
1 tsp salt
2 cups shredded, sweetened coconut
1 cup butter, cut into chunks
1 ½ cups macadamia nuts
1 bag white chocolate chips

Preheat the oven to 350 degrees. Prepare a 9×13” pan with baking spray.

In the bowl of a food processor, combine all of the dry ingredients.

Flatten the dough with a heavy spatula.

Bake the bars for about 40 minutes. The bars will be golden brown on the top.

Let the bars cool completely. When they are all the way cooled, sprinkle with powdered sugar.
Slice (with a very sharp knife!) into bars and serve!

As did I! I put them in the freezer to try to stop the nibbles. It didn’t really work-turns out they are very good frozen too :)

These look amazing and I can’t wait to try them. I plan to use dark chocolate.
One question though: What kind or butter do you use? Salted or unsalted?

  16. Heather Christo says:

I use salted butter Kim- but you could really do either!

  17. David says:

I am very surprised this recipe has NO eggs in it. What is up with that? Most recipes for these bars call for at least 2 eggs, some require 3.

  18. Heather Christo says:

These bars have a shortbread texture, so they are very tender and flaky- not cakey or puffy (from the eggs). Give em’ a try!
