Mint Oreo Ice Cream

After the Cookies and Cream Cupcakes I made a few weeks back, I have had extra Oreo cookies lying around in the pantry. I tried to think about what else I could make to use those cookies up, and while cookies and cream ice cream was the easy and natural choice- I tried to think of any little variation on the classic that would be fun. I thought of the old Ben and Jerry’s flavor Mint Oreo (do they still make it?!)

I made pretty basic Ice Cream base and just added Oreo cookies and a bit of peppermint extract. The result is a delicious and nostalgic ice cream treat that is absolutely loaded with the creamy and crunchy chocolate cookies.

Great for kids and kids at heart!!

2 cups heavy cream
1 cup milk
1 cup sugar
2 whole eggs
1 egg yolk
1 tsp peppermint extract
8 Oreo cookies

Roughly chop the Oreo cookies. Place them in a small bowl and place them in the freezer. (This will keep the base from getting too warm while the ice cream is churning).

In a small pot, combine the cream and the milk and bring to a simmer. Add the peppermint extract and remove from the heat.

While the milk and cream are coming to a simmer, beat the eggs until pale and fluffy.

While continuing to beat the eggs, slowly add the sugar to the eggs.

Temper the eggs by very slowly adding the hot milk/cream to the egg/sugar mixture.

Add the mixture back to the pot and cook the custard until thick enough to coat the back of a spoon.

Pour the mixture into a bowl and let cool before refrigerating.
When the custard base has cooled completely (2-4 hours or up to overnight).

When it is really cold then churn according to your ice cream makers directions.

When the ice cream is half way through its cycle, add the frozen Oreo cookies to the ice cream.

Put the ice cream base (which will be semi-soft) into containers and freeze.

When the ice cream is hard, scoop and enjoy!

    lol!! there are so many sweets “lying around” this house Vicki that the last thing I am trying to slap hand myself away from is Oreo’s! I know I keep saying it, but I think I need a sugar intervention.

    Delish! I love oreos and ice cream! At Coldstone creamery, they have oreo cream filling ice cream (so addicting!)
