Chocolate Peanut Butter Cookies

In celebration of one of my favorite Holidays, I am going to have a posting frenzy this week. And I think they are all going to have to be Halloween appropriate. Hope you have your sweet tooth in gear…

We will start out with these delicious Chocolate Peanut Butter cookies! These cookies were made with pure love for my kids. Oh, and because I had a serious craving for cookies… and for chocolate…and for peanut butter (I am aware I have issues).

They are chewy and dark chocolatey and when I thought about what form the peanut butter should come in, Reeses Pieces became the fast and obvious choice. With Halloween right around the corner, I thought these orange and yellow candies would be super cute and festive! (Did I mention they were full of peanut butter?)

So you have a crispy exterior, a chewy dark chocolatey inside and then little crunchy bites of sweet and salty peanut butter. Mmmmm….

I was going to suggest that these would be so great for lunches or Halloween parties this week (if your children are in a peanut-free school, then not so much) or just piled up in your cookie jar at home- not that they will last long ☺

Chocolate Peanut Butter Cookies, makes 2 dozen
1 cup butter softened
1 cup brown sugar
1 cup white sugar
2 eggs
2 tsp vanilla
2 cups flour
¾ cup cocoa powder
1 tsp baking soda
½ tsp salt
18 oz Reeses pieces- 6 “King” sized bags (what?? It’s Halloween…)

Preheat the oven to 350 degrees. Prepare ½ sheet pans with silpats or parchment paper.

In the bowl of a standing mixer, cream together the soft butter and the sugars until fluffy.

Add the eggs and the vanilla.

In a separate bowl, combine the flour, cocoa powder, baking soda and salt.

Add the dry ingredients to the mixer and stir well to combine.

Add the Reeses Pieces and mix until just combined.

Drop by the large spoonful, (I used an ice cream scoop) onto the baking sheets. (I baked about 8 at a time).

(sorry- I realized just as I am posting this that Pia stuck her fingers in the cookie dough closest to the camera!)

Bake the cookies 10-12 minutes (do NOT over bake, they are better on the less done side) and then place on a rack to cool.

(Coco may only have 2 teeth, but she will use them moments after this picture was taken to secretly pull her highchair on wheels over to the cookie plate and shove one into her mouth, devouring almost the entire thing before I realize what has happened. When you look at that little face, can’t you just picture the whole sneaky thing? I couldn’t get mad- it was too funny.)

    warning. be very, very careful. You will eat too many of these (without a doubt) if you make them. But everyone will love you for making them, so it will probably be worth it :)

    Unsweetened! not silly! but all of my recipes call for unsweetened. I will be sure to specify in the future!
