Truffled Popcorn

Great Sunday afternoon snack right here! We just did the weekly family grocery store trip (well, actually my husband took a well deserved nap on the couch and I dragged a 3 year old and a screaming 10 month old to the store, where we were quickly run out of there. Turns out people don’t really like screaming babies?) and I let Pia pick out a snack. She picked popcorn. Not premade popcorn, not microwave popcorn, but a container of Crimson Jewell Premium popcorn (because it was purple).

Then it got me thinking about my friend Maria, and how she told me she had just had some truffle popcorn down in the Market (Pike Place Market to non-Seattleites). Yummmmm….

So, I altered my usual popcorn routine to infuse the truffle flavor and it was really delicious. I also added a little freshly grated Parmesan cheese which added some nutty flavor to the popcorn. I also added truffle salt to the popcorn, which adds more truffle flavor.

Truffled Popcorn
¼ cup vegetable oil
1 Tbp truffle oil (white or black)
½ cup popcorn kernels, (whatever variety you like, although we used Crimson Jewell here)
Truffle Salt or Kosher salt to taste
Good quality Parmesan, freshly grated

In a large pot, over medium heat add the vegetable oil and the truffle oil.

Add the popcorn kernels to the oil and let the kernels simmer for about 1 minute.

Put a lid on the pot and let the popcorn pop until there are a few seconds between pops.

Immediately empty the popcorn into a bowl, and sprinkle with truffle salt and freshly grated Parmesan cheese. Enjoy!

    My family and I love homemade popcorn and coming up with all sorts of new flavor combos. Using truffle oil and truffle salt sounds divine. Isn’t it amazing how a few simple ingredients can really turn something ordinary into something extraordinary?

    Yes! and popcorn is the perfect blank canvas as far as I am concerned. If you get a chance, will you let me know what other “toppings” you and your family use? Popcorn is an autumnal/winter obsession around here!
