We are home this Labor Day weekend, with no exotic vacation planned. On top of that it is grey and sad out. See below.
(but here is my sunshine!)
Pia and I were the only ones awake at 7 this morning, so we decided to make up a new waffle recipe and surprise Pete and Coco with breakfast! The natural choice was to use the very brown bananas on the counter top. And that was how these banana waffles were born!
They have a nice banana flavor, and the bonus is that it smells like banana bread while baking!
I served these with fresh sliced bananas and a sprinkling of pecans., (and of course butter and syrup.)
Banana Waffles, makes 8 (smallish) waffles
2 cups flour
1 Tbs sugar
2 tsp baking powder
1tsp baking soda
1 tsp salt
1 ½ cups milk
½ cup sour cream
2 eggs, separated (with whites in a big bowl)
Preheat waffle maker.
Combine the dry ingredients in a large bowl.
Melt the butter and set aside to cool slightly.
In a medium bowl, mash the two bananas well.
Add the yolks, sour cream and mix well.
Add the butter and the milk.
Add the wet ingredients to the dry ingredients and mix well.
Whisk the egg whites in a very clean bowl with a wire whisk. (This should take 2-3 minutes of whisking- allternatively you could use an electric mixer)
Whisk them until they form stiff peaks.
Gently fold the whites into the batter until they form a fluffy batter.
Ladle the batter into the waffle maker (greased if necessary) and cook until the waffles are golden brown.
Serve hot with the condiments of your choice!
