Spicy Red Pepper Dip

This is my favorite dip, and I thought that I had posted it in the last year? However I can’t seem to find it, and my friends keep asking for it- so here we go!
This is very healthy and completely packed with flavor. I eat this non-stop when I go through my “healthy stages”, but no one would know that this wasn’t totally indulgent. Serve this with all of your favorite freshly cut vegetables or even use it in place of butter on a baked potato.
2 cloves garlic
4oz roasted red peppers packed in water and drained, (half a jar)
2 TBS of mama lil’s kick butt hot peppers with oil, (or other HOT pickled peppers packed in oil)
16oz 2% fat cottage cheese
kosher salt to taste
Put all of these things in a blender and puree on high until smooth. Enjoy!
