Radicchio and romaine salad with pears, dried cherries and blue cheese vinaigrette
October 22nd, 2008
I love a good seasonal salad. So in this salad, I really let the wonderful autumnal ingredients shine. The beautiful red lettuces are a very pretty contrast to the bright pears and the hearty cherries. You get lots of sweet and savory in this salad.
Radicchio and Romaine Salad
-4 cups of baby red romaine and red radicchio
-1/2 of a seasonal pear
-1/2 cup of dried cherries
-Blue cheese vinaigrette
1) Lightly dress the romaine and radicchio with the vinaigrette, and pile onto a salad plate.
2) Sprinkle each salad with ¼ cup of dried cherries.
3) Thinly slice the pear half into ten slices. Carefully fan five of the slices out onto each salad.
Blue Cheese Vinaigrette
-1/4 cup red wine vinegar
-1/2 cup olive oil
-1/4 cup freshly chopped parsley
-1/4 cup crumbled blue cheese
-1 Tbs Worcestershire sauce
-1 tsp brown sugar
-Salt and black pepper to taste
1) Whisk all together in a bowl, or shake together in a mason jar.
